Bugra founded Dolan's in 2017 with a single dining room and the conviction that hospitality is operations, not just food. Nine years later he runs the events practice — every Run of Show engagement starts with a conversation with him. Bugra 于 2017 年创立 刀郎,从一间小餐厅起步,坚信"款待是运营,不只是食物"。九年之后,他主导活动业务——每一场 章法 合作都从与他的一次对话开始。

Subat is the kitchen. Whole-roasted lamb, hand-pulled noodles, the cumin-and-chili dry rub that no one outside the kitchen has the recipe to — all live with him. He has been on the line at Dolan's since the year we opened. Subat 就是厨房本身。整羊烤制、手拉面、那份只有厨房里的人知道配方的孜然辣椒干腌料——一切都在他手里。从 刀郎 开张那年起,他就一直在灶台后面。
